Hash Brown Casserole

NEED:
6 eggs
1 can ( 12 ounces) evaporated milk
1 teaspoon of salt
1/2 teaspoon of black pepper
1 package of frozen shredded hash brown potatoes ( 30 ounces)
2 cups ( 8 ounces) shredded cheddar cheese
1 medium onion--diced
1 small green pepper--diced
1 cup diced ham ( optional)
Beat eggs well and combine with evaporated milk, salt and pepper. Add potatoes, cheese, onion, green pepper and ham. Mix well and pour into sprayed or greased 9 x 13 inch baking dish.
Oven at 350 degrees. Bake for 60 to 65 minutes. Makes 12 serving.

Can I make this one the night before and just bake it in the morning like the brunch one? I have a difficult time dealing with broccoli in the morning.

There is no reason you can't. Just make sure to cover really well. Let it sit out about 15 minutes before you put it in the oven, then bake as directed.
